I was inspired by National Donut Day to share this healthy snack I make for my kids. I know it’s not an actual donut but it is donut shaped and my kids thought it was a fun option.  Plus, it’s way better for you!

One of my favorite combos is fruit and peanut butter. I love to spread peanut butter on a cut banana and top it with strawberries, blueberries, raspberries and/or blackberries and some chia seeds.  However, my kids aren’t as keen to have a banana with nut butter and lots of berries. I tell you, they’re missing out! But I decided they might prefer apple slices since they’re fun shaped and don’t require a fork to eat.

I was right! My kids were so excited when I served them Apple “Donut” Slices for lunch. Anything with “donut” in the name has to be tasty right?

I used an apple corer and sliced the apple into about ¼ inch slices. Then I topped each slice with nut butter. I used peanut butter for my daughter (like me she’s a diehard peanut butter fan) and almond butter for the rest. My son is allergic to peanuts, plus almond butter is actually the healthier option.

Then, I topped each slice with raisins, sprouted pumpkin seeds and chia seeds. They quickly gobbled them up and asked for seconds. Mom for the win!

I think these would be great with other toppings too, like dark or white chocolate chips, coconut flakes, golden raisins or dried blueberries. Fresh berries would be fun too.

Next time, I plan to make an apple “donut” bar and let the kids top their own. It’ll be kind of like decorating cookies and kids love that.

My 3 year-old decided to have his plain, but thought the apple tasted better as a donut shape, so that works too.

I know I’ve been talking a lot about how much my kids loved these, but honestly they’d be a great healthy snack for adults too. Apple “Donut” Slices are paleo, gluten free and vegan.  I know I love them, but like I said, I’m a sucker for the fruit and nut butter combo. How about you?

Instructions
  1. Use an apple corer to remove the core of a large apple.
  2. Cut the apple into about ¼ inch thick slices.
  3. Top with nut butter and your desired toppings. Serve. Enjoy as a tasty snack or lunch.
