Asian Spaghetti and Meatballs

For the Sauce
  1. Bring a large pot of water to boil and cook pasta according to package directions. After the pasta is done, drain and toss with a bit of oil so it doesn’t stick together.
  2. Chop all the veggies.
  3. Mix the sauce in a small dish.
  4. Heat a medium skillet over medium-low heat. Add oil.
  5. After oil gets warm, add celery, carrots and bell pepper. Sauté for about 3 minutes (stirring), then add garlic and ginger. Sauté for a minute, unit garlic is fragrant but not browning.
  6. Add green onion, kale, bok choy and meat balls. Stir for about 2 minutes, until the kale softens a bit.
  7. Pour in the sauce. Stir. Add the pasta and toss. Add a few sprinkles of sea salt and taste.
  8. Before serving add sesame seeds. Additionally, serve with extra Sriracha for those that like a spicier dish.
Recipe Notes
  • I cooked a 13 ounce package of pasta but I didn’t use it all. 10 ounces is an estimate. Add a little pasta at a time, toss and add more until it’s the right constancy.
  • I used coconut sugar but you could sub in brown sugar or even raw cane sugar.
  • Use more Sriracha if you’d like a spicier dish. I have 3 kids so I made the dish on the mild side and add extra spice from my husband and I.
  • The pasta in the dish is great on it’s own. So, if you’re vegetarian or vegan, just leave it out. Or you could sub in tofu. It can even be gluten free if you use gluten free pasta.
