I wanted to share a fun little twist on banana muffins. Banana muffins are probably one of the most popular muffins — right alongside zucchini and pumpkin, they top my list.
I love how versatile they are. You can add nuts, chocolate chips, etc. But my favorite part of banana muffins is how quick and simple they are. Banana muffins are one of the rare occasions where you only need one bowl. It’s amazing! It’s one of the few times my husband can’t say, “this was so good, but did you use every dish we had?!”

It makes me so happy when I can make quick, simple and delicious snacks for my family. And not only are these muffins tasty, they’re fun too. These cute little mini muffins have a surprise almond butter center. Yum! I used almond butter because my son is allergic to peanut butter, but you can easily sub in peanut or cashew butter. Banana and nut butters go so well together and it’s no surprise that they make for a great muffin combo too.

To bake my mini muffins I use a 48 cup mini muffin pan by Wilton. I love it! The muffins always turn out great. Another plus, you can save time and energy because you can bake all the muffins at once. Click here to see this muffin pan on Amazon.

These Banana Almond Butter Mini Muffins use a common banana muffin recipe. I’ve made banana muffins many times and if I’m not going for a super healthy muffin I usually use this banana muffin recipe. If you Google banana muffins you will find most recipes are very similar. Besides the addition of almond butter, the only changes I’ve made is the addition of flax meal, (cause why not add a little extra health benefit) and I like to use whole wheat flour. Whole wheat flour is a slightly healthier choice and I don’t think it noticeably changes the flavor or texture. I also like to use butter in banana muffins. I feel like it enhances the flavor. But if you’d like you could sub in oil. Like I said, banana muffins are so versatile. Isn’t it just wonderful?

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mash bananas.
  3. Add wet ingredients, stir.
  4. Mix in dry ingredients.
  5. Grease a mini muffin pan. Add a small spoonful of batter, followed by a dollop of almond butter and topped with batter to all 48 mini muffin spots.
  6. Bake for 10 minutes.
  7. Cool in muffin pan for 5 minutes, remove muffins and allow to cool on a baking rack.
