Cauliflower Barbecue Chicken Pizza
Cauliflower Barbecue Chicken Pizza is a tasty and so simple weeknight dinner, perfect for the entire family. The cauliflower in the crust incorporates more veggies into the meal, making it an ideal meal to serve little ones.
Lately, I’ve been experimenting more with cauliflower. I’ve made this super tasty Cauliflower Fried Rice and I’ve made cauliflower pizza many times this summer. The kids’ favorite is the Cauliflower Pesto Pizza, which I have to agree was so delicious. But, as I’ve mentioned before, I’m a pesto lover, so basically once you put pesto on something it makes it even more likable!
I love making cauliflower pizza because not only is it simple, but it’s a great way to serve vegetables to kids. However, I never sneak in veggies. I’m always upfront with my children as to what they are eating. We have a rule — they must try everything. At first, my boys were skeptical of cauliflower pizza but they knew they had to try at least one bite. And, I’m happy to announce — cauliflower pizza won them over. While they still love traditional pizza, they’re excited every time I make cauliflower pizza. My 5 year-old says it’s his favorite way to eat cauliflower. And really, who’d disagree? Cauliflower, mixed with cheese, herbs and spices and topped with more cheese and traditional pizza toppings … who’d say no to that?
Besides Cauliflower Pesto Pizza, I’ve made cauliflower pizza with traditional pizza sauce and a white garlic sauce. All three versions were delicious! But for lunch the other day, I wanted to try something different. I saw the head of cauliflower in my fridge calling to me that it was time I cooked it. I also had leftover grilled chicken and cilantro. Then the thought occurred to me — Cauliflower Barbecue Chicken Pizza would be delicious! Barbecue chicken pizza is one of my husband’s favorites so I figured even if it wasn’t the best concoction, he’d at least eat it. Cause we’re a no waste household. Thankfully, wasting food wasn’t an issue. Cauliflower Barbecue Chicken Pizza is so yummy!
I used different spices than my traditional cauliflower pizza crust. I picked flavors like garlic, onion and smoked paprika to complement the barbecue chicken flavor. Then, I topped the crust with a mix of mozzarella and Colby cheeses, sweet peppers, green onions and chicken. When the pizza was done I sprinkled fresh cilantro. Yum! My only alteration — next time I’ll make more! My family loves cauliflower pizza so much now, one head of cauliflower isn’t enough!
If you haven’t tried cauliflower pizza, I’d definitely recommend it. Just remember — always squeeze out all the water after you microwave the cauliflower, otherwise you’ll have a soggy pizza. And no one likes a soggy pizza!
It’s great to turn vegetables into fun foods for kids. While my daughter eats a variety of fruits and veggies, my boys are far more picky, so it’s always a win when I find new ways to feed my little ones healthy foods.
Plus, cauliflower pizza is low carb and vegetarian (depending on the topping choices) so it’s a meal that fits well into a variety of diets.
