This Cauliflower Fried Rice is amazing because is really seems like you’re eating actual rice instead of vegetables. The cauliflower takes on the combination of Asian flavors. It’s sure to satisfy everyone in the family.

Fried rice is one of my favorite Asian meals because it’s so versatile. As long as you have the basics down, you can change up the veggies and the meats and it’ll taste like a new meal. I’ve made it with chicken and kale or even bacon and pineapple, and it’s always delicious.

A few years ago, after some Pinterest searching (cause that’s the first place I go for recipe ideas) I stumbled upon Ali at Gimme Some Oven’s fried rice. I had made fried rice many times before but it wasn’t until I followed a few of her tips that I really perfected the dish.

Her biggest tip – to my surprise – was to fry the rice in butter! I never had used butter in fried rice before. To me, it just didn’t seem to go in Asian food. But, I decided to trust Ali. I loved her blog and had made her recipes before and she said it was the absolute best fried rice.

And …. she was definitely right! Butter is the perfect fat to use to fry rice. It’s absolutely delicious. I’ve never used anything else since.

The other tips I really liked were to really take the time to “fry” the rice and to add the sesame oil as a finisher. Before, I’d never used sesame oil as a finisher in fried rice. Guys, do it! It adds such a wonderful layer of flavor.

One thing I’ve changed up is to scramble the eggs in the same pan. Traditionally, recipes call for the eggs to be scrambled first, removed and then added in at the end. A few years ago my mom had given me the tip to just push the eggs aside, scramble and then mix them in. I love doing it this way. It seems quicker, and it saves a dish. Now, I have one less dish to clean.

Additionally, for this recipe I have one big change — there’s no rice! I opted to make this fried rice healthier and used riced cauliflower instead. What’s awesome about cauliflower in fried rice is in all honesty, you won’t miss the rice! My husband isn’t too fond of cauliflower and even he really enjoys this dish. My kids didn’t even know it wasn’t rice.

What I love most about my Cauliflower Fried Rice is that you feel completely satisfied eating an all veggie meal. Cause not only is the rice actually a vegetable, the dish has sweet onions, carrots, garlic, bean sprouts, snap peas and green onions. So much healthy goodness! Yum!

Instructions
  1. In a wok or large pan, heat 1 tablespoon butter over medium heat. Heat until melted.
  2. Add onion, carrots, garlic, snap peas. Season with salt and pepper and sauté until softened. About 5 minutes.
  3. Increase heat to medium high and add 1 tablespoon butter. Add cauliflower, green onions, soy sauce, stir and sauté. Continuing sautéing until cauliflower is cooked through. About 5 to 8 minutes.
  4. Push the rice to the side of the pan. On the opposite side add 1/2 tablespoon of butter. After the butter is melted pour in the eggs. Scramble the eggs. Once the eggs are scrambled stir into the rice.
  5. Add the sesame oil. Taste, season with salt or add more soy sauce if needed.
  6. Serve topped with green onion and Sriracha if desired.
