  1. In a wok or large pan, heat 1 tablespoon butter over medium heat. Heat until melted.
  2. Add onion, carrots, garlic, snap peas. Season with salt and pepper and sauté until softened. About 5 minutes.
  3. Increase heat to medium high and add 1 tablespoon butter. Add cauliflower, green onions, soy sauce, stir and sauté. Continuing sautéing until cauliflower is cooked through. About 5 to 8 minutes.
  4. Push the rice to the side of the pan. On the opposite side add 1/2 tablespoon of butter. After the butter is melted pour in the eggs. Scramble the eggs. Once the eggs are scrambled stir into the rice.
  5. Add the sesame oil. Taste, season with salt or add more soy sauce if needed.
  6. Serve topped with green onion and Sriracha if desired.
