Over the last few years I’ve become a big fan of salads with fruit like my Strawberry Spinach Salad. I love berries and apples on salads! Once I had my first bite of a salad with strawberries and apples, there was no turning back. I had a new favorite salad!

The other day I saw a salad recipe with peaches, feta cheese and bacon and it sounded so delicious, the next day I made a salad. One of the best parts of summer is that it’s the season for stone fruit – how I love peaches, nectarines, apricots etc. It’s also salad season so why not combine the two.

Since Memorial Day is this weekend I decided it was the perfect time to share this salad recipe. I was inspired by grilling season and stone fruit to make this Grilled Peach, Chicken and Bacon Salad with Honey Mustard Vinaigrette.

Grilled Peach, Chicken and Bacon Salad with Honey Mustard Vinaigrette

I decided to whip up a quick honey mustard vinaigrette which I used both as a marinade for the chicken and a salad dressing. I prefer homemade dressings since you get to control the ingredients. You know exactly what’s in it and you’re not getting any extra unwanted additives. I also find that store bought vinaigrettes are often based with canola oil or soybean oil which just isn’t a healthy choice. Extra virgin olive oil is healthier and tastes better.

While the title of this recipe is so long! (Sorry about that…) This salad is simple to make and only has a few ingredients. I love the combo of peaches, bacon and feta, but I wanted to make it a main dish so I added the grilled chicken. But if you’re headed to a barbecue this weekend and are looking for a tasty side dish you could always skip the chicken. The salad with pecans, bacon, feta and yummy grilled peaches would be absolutely delicious. Plus, your family and friends will probably with eager to try it cause I bet like me they’re all craving stone fruit. It’s so lovely to see them in the produce section again.

If you’re hosting a barbecue this weekend or are looking for a dish to bring, you could also try this Red Potato Salad, it’s light on the mayo but has bacon, green onions and eggs. It’s by far my favorite potato salad. Anytime I’ve brought it to a family gathering, I never have leftovers.

Red Potato Salad goes great with barbecue chicken thighs if you’re looking for a complete meal.

Grilled Peach , Chicken and Bacon Salad with Honey Mustard Vinaigrette
Instructions
  1. Combine all the dressing ingredients is a salad shaker or whisk in a bowl. Place chicken in a bowl and pour about 1/3 of the marinade in with the chicken. Marinade at least 30 minutes or up to a couple hours.
  2. Cook bacon, your preferred method. I find it easiest for this recipe to microwave it.
  3. Heat the barbecue or indoor grill pan to medium high heat. Spread a little butter on the grill and place peaches cut side down. Grill a few minutes, until grill marks appear and peaches are warmed, but not burnt. Remove peaches and let cool on a cutting board.
  4. Remove chicken from marinade and shake off excess. Salt and pepper the chicken then place on grill and cook over medium heat until cooked through. Usually about 20 minutes.
  5. Remove the chicken from the grill and place on the cutting board. After the chicken, bacon and peaches have cooked, slice the chicken and peaches, chop the bacon.
  6. Prepare the salad with lettuce, chicken, bacon, peaches, feta and pecans. Serve drizzled with dressing and sprinkled with fresh pepper.
