Italian Breakfast Bowl

  1. Preheat the oven to 375 degrees.
  2. Line a baking sheet with parchment paper .
  3. Toss the potatoes in olive oil and season with salt and pepper. Place on half of the baking sheet, roast for 10 minutes.
  4. Meanwhile, toss the asparagus in olive oil and season with salt and pepper. After the potatoes roast for 10 minutes add the asparagus to the other side of the pan. Cook for another 10 minutes, or until both are done.
  5. While the vegetables are cooking cook the sausage according to package directions. If you purchased links, remove them from the casing by squeezing one end, then scramble.
  6. In another pan, scramble the eggs.
  7. When everything is done, assemble the breakfast bowls. Place the eggs, potatoes and asparagus side by side. Top with tomatoes, parmesan cheese and basil.
  8. Serve and enjoy!
Recipe Notes

This recipe can easily be altered to feed more or less people, just use more or less ingredients. Alternatively, this meal works great for meal planning. Everything can be made up on a Sunday and used throughout the week for a quick, tasty and healthy breakfasts.
