I love frittatas because they are so versatile. You can add whatever ingredients you like and it completely changes the flavor. You can go Italian like I did for this Italian Veggie Lovers Frittata, or Mexican, BLT style or full of sausage and cheese. Yum! So many choices, it’s hard to decide which one to make!

Another thing I love about frittatas, is that it’s a perfect breakfast to feed a crowd. Unlike pancakes and waffles, there’s no warming in the oven necessary. Everyone gets to eat at once. As a mom, (and the primary cook in our household) I love this about frittatas. Cause really, pancakes and waffles aren’t as tasty warmed in the oven. And if I choose to serve one person at a time, my little ones are ready for seconds before I have even have firsts!

With a frittata, as soon as it comes out of the oven (and cools), slice it up and everyone can sit around the table and enjoy breakfast together. And there’s something so special about sitting around the table with your family. It’s one of my favorite times.

Since mealtime is so important to me, I attempt to meal plan each week. However, often times I change my plan. I’ve learned to be flexible and you just can’t predict every day. So while I do make an overall meal plan for the week, more often than not things change.

When I made this Italian Veggie Lovers Frittata, it definitely wasn’t part of my original plan. But it was the weekend, and sometimes you just can’t predict the weekend.

Often times, when I cook I’m inspired by the ingredients I have. Either by what’s in season or what I purchased and need to use before it goes bad. Cause in all realism, I shop by what’s in season and what’s on sale — we’re a family of 5, and my little ones are just getting bigger. (All the parents out there completely sympathize.)

So, my Italian Veggie Lovers Frittata was created at random. I saw all these veggies and eggs in my refrigerator and for some reason frittata popped in my head. Funny thing — I haven’t made a frittata in years. But for some reason my spinach, mushrooms, peppers and eggs spoke the words “frittata” to me that morning.

And, my Italian Veggie Lovers Frittata was born. I quickly Googled “frittata” to double check my plan of action. Epicurious definitely validated my plan. After that, I just went for it. It’s what I love most about cooking. I enjoy getting creative in the kitchen and just adding ingredients that I think will go nicely together. It’s fun! And it’s something I hope everyone will enjoy one day. The kitchen offers so many possibilities. What I love most about cooking are the endless amounts of things you can create.

I hope you all enjoy this frittata or if you’re not a fan of the ingredients I used, feel free to swap them out for your favorite ingredients or whatever you have on hand. Italian Veggie Lovers Frittata
Instructions
  1. In a 12 inch oven safe non stick skillet heat 2 tablespoons butter over medium heat. Add shallot and sauté until softened, about 3 to 5 minutes.
  2. Add potatoes, cook about 5 minutes, until slightly browned.
  3. In a bowl or large measuring cup, whisk 8 eggs with milk, salt and pepper. Be careful to mix just until incorporated. Over mixing will cause the frittata to poof in the oven. Mix in the mozzarella cheese. Set aside.
  4. Preheat the oven to 350 degrees.
  5. Back the stove. Add the last tablespoon of butter along with the zucchini, mushrooms, spinach and peppers. Sauté until the spinach wilts and everything is cooked through.
  6. Add the eggs and rosemary. Mix together. Cook over medium heat until the egg starts to pull away from the pan. About 5 minutes.
  7. Bake for 15 minutes or until set.
  8. Serve and enjoy.
