Mashed Sweet Potatoes
Mashed Sweet Potatoes are a simple, no fuss side dish perfect for the holiday season. Roasting the sweet potatoes enhances the potatoes flavor, and the overall sweetness is balanced out with a bit of spicy cayenne.

  1. Preheat oven to 375 degrees F.
  2. Clean sweet potatoes and cut a few slices in the top. Place on a parchment paper lined baking sheet.
  3. Bake sweet potatoes for 30-40 minutes, checking at 25 minutes. Sweet potatoes are done when they’re soft to the touch.
  4. After the potatoes cool a bit, slice each potato down the middle. Use a spoon and scoop out the inside into a bowl.
  5. Mash the potatoes with butter, half and half, cayenne, salt and pepper. Add more or less spices to your liking.
  6. Serve immediately with extra butter if desired. Enjoy!

I always add a little bit of butter and half and half at a time. Mash and add more if needed. Same for the spices. I always taste along the way.
