No Bake Almond Chocolate Bites

No Bake Almond Chocolate Bites are a perfectly balanced bite sized treat. They’re nutty and chocolaty, and so tasty they probably won’t last long. And as an added bonus, they’re full of vitamins, nutrients and protein to give you a little natural energy boost.

No Bake Almond Chocolate Bites

I’ve made these twice in the last 2 weeks and the second time I doubled the batch. My original recipe makes about 16 bites. Between my husband and I, and our three little ones, we barely had any left by the end of the night! I love it when my family loves something I made so much, they can’t wait until I make more. And what’s even better is when the kids love healthy food. It’s so exciting to share with my children that eating healthy can be absolutely delicious!

No Bake Almond Chocolate Bites are super simple to make. They’re no bake, which is perfect for the hot summer days that are soon to come.

No Bake Almond Chocolate Bites

I was inspired to make these from a recipe on the back of my Organic Flaxseed Meal from Trader Joe’s. I altered the recipe a bit, using less oats than the original recipe and no peanuts since my son has a peanut allergy. Plus, almond better is a healthier choice.

To make the bites – combine oatmeal, almond flour, almond butter, chocolate chips, flaxseed meal, maple syrup, vanilla and cocoa powder in a bowl. The cocoa powder is optional. I’ve made it with and without. If you’re a chocolate fan I’d defiantly leave it in! And as an added bonus you’ll get all the nutritional benefits from the cocoa. It makes me so happy that chocolate (in certain forms) is healthy for you!

No Bake Almond Chocolate Bites

Once you combine all the ingredients, form them into about 16 1 inch balls. Arrange them on a baking sheet lined with parchment paper and freeze them for about an hour. Basically until they set. My kids like them cold, right out of the freezer, cause they can’t wait to eat them.

No Bake Almond Chocolate Bites work best stored in the refrigerator. The cold insures they keep their form, plus there’s no preservatives, so it keeps them fresh.

But I promise you, you won’t have to worry about these bites going bad — in my house they barely last a day!

Instructions
  1. Line a baking sheet with parchment paper.
  2. Mix all ingredients in a large bowl. Scoop batter out and roll into about 1 inch balls.
  3. Arrange bites on baking sheet and freeze until set, about 1 hour.
  4. Store in the refrigerator.
