No Bake Berry Cheesecake Tart

  1. Set cream cheese on the counter to reach room temperature.
  2. Grease and/or line a 9 inch round tart pan with parchment paper cut in a circle.
  3. Cut the dates in half length wise and remove the pit.
  4. Add dates, almonds and salt to your food processor. Chop/blend until the nuts and dates are finely chopped and blended together into a dough or paste.
  5. Press the date crust into the tart pan, spreading it out evenly and up the sides.
  6. Using a stand mixer or large mixing bowl and hand blender, mix the cream cheese until smooth.
  7. Add the heavy cream, sour cream, vanilla and almond extracts, lemon juice and stevia. Start on low setting and mix until incorporated. Turn mixer up and mix until smooth and slightly fluffy, about 1 to 2 minutes.
  8. With a spatula, add the filling to the tart crust. Smooth the top.
  9. Top with fresh blueberries, strawberries and raspberries – as many as you desire.
  10. Cover and refrigerate over night.
  11. Remove tart from pan, cut into slices and serve. Enjoy!
