Refreshing Cucumber Kale Smoothie

In the spirit of St. Patrick’s Day and all things green, I’m sharing a green smoothie. I know I’ve already shared a couple of green smoothies but I just love a good green smoothie. They’re quick and easy to make, full of vitamins and nutrients and so tasty.

Refreshing Cucumber Kale Smoothie

This Refreshing Cucumber Kale Smoothie has cucumber, lime, apple, pineapple, chia seeds, turmeric and of course, kale. I’ve recently started adding cucumber to my smoothies, it really makes a difference. Cucumbers have a light, fresh taste that brightness up the smoothie and creates a refreshing drink. It also complements many fruits and veggies. If you’ve haven’t tried cucumber in a smoothie yet, give it a try, it’s delicious.

As I previously mentioned in my Pineapple Cucumber Green Smoothie, I always add the core of the pineapple to my smoothies. Pineapple core contains the protein-digesting enzyme bromelain which has tons of health benefits. To make this smoothie even healthier I decided to mix it up a bit and add a little turmeric. Turmeric is considered a top medicinal herb because of its powerful anti-inflammatory properties. But it has a strong earthy flavor so I don’t like to add too much otherwise it’ll change the smoothie flavor. But if you like the flavor of turmeric you could always add more.

I love starting my day with a healthy smoothie. It makes be feel good that I’ve began my day on the right track with a large dose of healthy fruits and veggies. Plus, a smoothie and a cup of coffee give me a lot of positive energy throughout my day.

Another bonus — the kids love smoothies too. So if you have a picky fruit and veggie eater like I do, you know at least he started his day with lots of greens.

Refreshing Cucumber Kale Smoothie
Instructions
  1. Starting with the water, add all ingredients to a blender.
  2. Start blending on low until ingredients are incorporated then turn the blender to high and blend until smooth.
Recipe Notes

I like to use a Vitamix for smoothies because it makes a really smooth drink. It also allows you to cut your fruit and veggies in larger pieces. If you don't have one, click here to check them out on Amazon. I love ours. It's one of my most used kitchen appliances.
