Shredded Beef Burrito Bowl
Shredded Beef Burrito Bowls are a healthier option to a traditional burrito. You get all the goodies of a burrito, and probably more, without the extra refined carbohydrates from the tortilla. You my think you’ll miss the tortilla, but after a few bites you’ll forget all about it.

Shredded Beef
  1. Mix spices in a bowl and rub over steak.
  2. Add beef broth to slow cooker than add steak.
  3. Cook low 6-7 hours. After it’s done, remove to cutting board and cut and/or shredded with two forks.
Assemble the burrito bowl
  1. Cook rice according to package directions. Stirring a pinch or salt, cilantro and the juice of half a lime at the end if desired.
  2. Sauté bell peppers and onion over medium heat, stirring often to prevent sticking. Cook for about 5-8 minutes until the veggies just begin to soften.
  3. To serve, in a bowl add the beef, rice, veggies and beans side by side. Top with desired toppings such as shredded lettuce, diced tomatoes, diced avocado, green onion, cilantro, crumbed cotija cheese and sour cream. Enjoy!
