Yesterday, I was inspired by National Cookie Day to make a batch of my grandma’s favorite holiday cookies, Snowball Cookies. My grandma makes these buttery cookies every December.
Snowball Cookies look like puffed up sugar cookies dusted in snow. It is like Christmas on a platter. My kids are always so excited when I make them. Yesterday they each ate three cookies! And I think if I would have let them they would have devoured the entire batch.
So here’s the thing about snowball cookies – usually I don’t like them. Snowball cookies are often one of those cookies that can easily be passed up or are just awful. But there is something special about this recipe. Plus, it is simple, easy and only calls for five ingredients – butter, sugar, vanilla, flour and powdered sugar, simple as that.
While this recipe is easy there are two important things to remember in order to bake the perfect snowball cookie. First, the butter needs to be softened, not at all melted, otherwise the cookies will flatten. If your dough gets too warm, just put it in the refrigerator for a few minutes.
The next important step is to roll the cookies in powdered sugar while they’re still hot. This ensures that the powdered sugar sticks to the cookie. Then do a final powder sugar dusting before serving, so your cookies look pretty. This is my daughter’s favorite part. She says it looks like fresh snow falling on the cookies.
So this is kind of crazy, but these are the first Christmas cookies I’ve made this year! I know it’s still the first week in December, but usually I’ve made at least a few batches by now. My daughter is in a play so our weekends have been busy with rehearsals. It means fewer cookies, but we’re all so excited to see her performance, because plays and Christmas cookies are two of my favorite things about the holiday season.
Next up on my baking list is probably gingerbread men. The kids ask to make gingerbread men every year and really who can blame them, they’re an adorable cookie.
