Soft Baked Zucchini Oatmeal Cookies
Perfectly chewy and gooey, these Soft Baked Zucchini Oat Cookies are filled with healthy goodness like almond flour, banana, walnuts, and zucchini of course! All those good for you ingredients are topped with melt in your mouth dark chocolate. These cookies won’t last long!

  1. Preheat oven to 350 degrees.
  2. Grate zucchini and squeeze out excess water with a cheese cloth, paper towel, kitchen towel or by placing the grated zucchini in a colander and pressing the water out.
  3. In a large bowl combine almond flour, oatmeal, cinnamon, baking soda and salt.
  4. In a separate large bowl, beat butter, sugar, egg and vanilla. Stir in mashed banana.
  5. Stir dry ingredients into wet ingredients.
  6. Fold in the zucchini, nuts and chocolate chips.
  7. Use a cookie scoop or a spoon to scoop out dough and shape into about 1 inch size balls. Place the balls on a parchment paper lined baking sheet.
  8. Bake cookies 12-14 minutes, until the edges are golden brown but the centers are soft. Cool on the baking sheet 5 minutes and transfer to a cooling rack until completely cool.
  9. Serve while still warm or completely cool. Enjoy!
