Strawberry Spinach Salad

When I eat this Strawberry Spinach Salad I’m instantly transported to summer. The combination of strawberries, apples, cucumber, blackberries, feta cheese and pecans topped with a sweet poppyseed dressing on a bed of baby spinach are delightfully light and fresh. The addition of grilled chicken make it a complete meal that’s healthy and satisfying.

Strawberry Spinach Salad

Despite the snow outside, I had all the ingredients to make a Strawberry Spinach Salad. And while I love traditional winter meals, like stew, soup and lasagna, I was craving something light and fresh. Plus, I recently saw that Panera Bread sales salad dressings at my local grocery store. While I usually whip up a quick vinaigrette, Panera Bread poppyseed dressing sounded absolutely delightful. I’m happy to say the poppyseed dressing didn’t disappoint. It was a wonderful complement to my spinach salad.

This salad is so simple to make. If you have chicken already grilled, you’ll be eating dinner in 10 minutes. That’s what I call the perfect weeknight meal! Plus, this salad is so versatile. Start with baby spinach or if you prefer a baby spring mix and top with strawberries. I also like to add chopped apples and cucumber but you could also add raspberries, blackberries or blueberries. The feta cheese really balances out the sweetness of the fruit and the nuts add the perfect crunch. (Plus, nuts are a lot healthier than croutons.) For this Strawberry Spinach Salad I used pecans, but walnuts would taste great too. Like I said, this salad is so simple to make and allows for creativity which makes it fun to make. You’ll end up with a pretty salad that’s sure to impress!

Instructions
  1. In a large bowl combine the spinach, strawberries, apple, blackberries, cucumber.
  2. Toss with about 1/4 cup of dressing then serve into 4 bowls.
  3. Top each serving with chicken, feta cheese and pecans. Serve with dressing on the side.
Recipe Notes

You can use leftover grilled chicken or grill a chicken breast and let cool before adding it to the salad. I like to use Weber Roasted Garlic and Herb seasoning for a quick and tasty dry rub.

      I’m glad you like it! I started adding fruit to my salads a few years ago, I love it! You’re completely right, fruit does make a spinach salad seem more like a treat.
