Summertime Green Juice

As many of you may have noticed, I really enjoy a good smoothie. I often enjoy a smoothie first thing in the morning — that is after coffee — cause above everything I love a nice cup of hot coffee in the morning. So, after my coffee, I often enjoy a smoothie or in the summertime a yogurt bowl. While these are two of my favorite healthy breakfasts, my husband really enjoys a big glass of homemade green juice.

Summertime Green Juice

A few years ago he watched the documentary Fat Sick and Nearly Dead. The documentary follows Joe Cross and his journey to a healthy lifestyle. Joe began his change by juicing. My husband was inspired by Joe’s switch and how he made the conscious life change decision.

While my husband didn’t switch over to juicing for every meal, he did incorporate healthy juices into in diet. My husband started out with Joe’s Mean Green Juice, but it was a little too potent for me. The combination of kale, celery and ginger with a little fruit was a bit bitter for my tastes. But my husband loved how great he felt after drinking that healthy green juice.

In one cup of juice he had eaten so many nutrients! And that makes a person feel great. 🙂

Summertime Green Juice

As I mentioned, I’m not a huge fan of the Mean Green Juice. But I do enjoy a tasty juice.

For breakfast the other morning, my husband was inspired by the celery in our fridge, to make a green juice. In all honesty, when he served the juice, I was a bit apprehensive, you see i’m really not a celery fan. Outside of potato salad, soup or fried rice, I can forgo the stringy veggie. But it is really good for you.

And, to my pleasant surprise, my husband’s new green juice was delicious! I couldn’t believe I enjoyed drinking celery! But as they say, never say never!

Summertime Green Juice

I told my husband that I had to blog about his juice. If he could win me over with a celery juice, than I think everyone would love it.

His, Summertime Green Juice, as I like to call it, is made with an entire head of celery. He also added cucumber, green apples, green grapes, a lime and zucchini. I named it Summertime Green Juice because of the zucchini and the beautifully bright green color. He added the zucchini because he wanted to add more veggies and we had a big fresh garden zucchini sitting on our counter.

The refreshing cucumber, tartness and sweetness from the lime, grapes and apple, and the juicy mild zucchini complemented the celery really well. Now, don’t get me wrong, you’ll taste the celery (especially if you’re not fond of the flavor) but the celery isn’t over powering. It blends well with all the other flavors.

Now I’d like to take the opportunity to thank my husband for creating this Summertime Green Juice. I can finally drink celery and actually enjoy it!

Summertime Green Juice
Instructions
  1. Remove each stalk of celery from the celery bunch, cut the apples in quarters to fit through the juicer.
  2. Juice all the fruit and veggies according to your juicers directions.
  3. Stir the juice and refrigerate or add ice.
  4. Enjoy!
Recipe Notes

I have a Breville juicer. It works wonderfully. But there are many brands out there.

  2. You know, I think I may have seen the same documentary – or at least something very similar where green smoothies containing kale etc were used. They really did sound very energising, but although I didn’t actually try it it didn’t sound that nice – especially when the person drinking it pulled such a face!! Now your hubby’s new version actually sounds much more pleasant, I guess it probably sounds naturally sweeter with the additon of the grapes. Thnks for sharing, #CookBlogShare

    • I actually really enjoy a green smoothie with kale and/or spinach but I like to add a little fruit, it really balances out the veggies. It’s a perfect way to get kids who don’t like “green leaves” to eat them. As far as juices go, the kale and celery combo was difficult of me to enjoy. It was so strong! More power to everyone who enjoys it. 🙂 But when you add the green grapes and mix milder veggies like zucchini and cucumber with the celery, it was actually really tasty. My 3 year old loved it so much, I made it two days in a row! 🙂 And anytime you can get kids to really enjoy veggies, that’s a win!
