Growing up my mom made the best (and I’m not exaggerating here) the best homemade macaroni and cheese casserole. I know, many of you may cringe at the word casserole, while others may love the word. It’s one of those love it or hate it kinda words. I only refer to her macaroni and cheese as a casserole because she completed her macaroni and cheese by putting it a 9 x 13 in dish, topping it with extra cheese and cooking it until it got all nice and browned and bubbly. OMG, it was the best!

But even though I loved her homemade mac and cheese (I’ll share the recipe one day soon) as a kid, I was still excited every time she made the boxed stuff. What can I say, I had the blue box blues. 🙂

Yes, Kraft was our choice of boxed macaroni and cheese.

Now that I’m a mom, I too make homemade macaroni and cheese, but I also buy the boxed stuff, because (I’m not going to lie) it’s easier. And for the amount of times my toddler wants mac and cheese, I’d run out of cheese! If he had it his way, he’d eat it for breakfast everyday! 🙂

Nowadays, I buy Annie’s brand. My kids didn’t get to grow up seeing the catchy Kraft commercial, so they’re partial to the cute bunnies instead.

But the other day the worst happened! My son begged for mac and cheese for lunch and to his horror, we didn’t have any. Oh man!

So, I looked for something else for lunch when I spied heavy cream in the refrigerator.

I thought, hmm, didn’t have any plans for this, why not use it to make macaroni and cheese? I had all the other ingredients, why not?

The result — the creamiest macaroni and cheese I’ve ever made!

My son, at first disappointed by the lack of the boxed variety, was super happy with his lunch.

My daughter ate three servings! She couldn’t get enough! 🙂

Now, I didn’t bake this macaroni and cheese like my mom did. I simply made the sauce and stirred it with the pasta. It’s actually quite simple. Sure, it’s more work than the boxed variety but it tastes so much better! And you get a lot more food.

I have three kids, they’re young, but they’re growing, and one box of Annie’s mac and cheese just isn’t enough. I also serve it with something else.

Super Simple Creamy Macaroni and Cheese

When you make it from scratch, you control how much you make. And like I said before, it’s actually not difficult. As long as you stick to this ratio 1:1:1, you’ll never fail.

The ratio:
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk (or cream in this case)
  • Then add your cheese. Start with 1 cup, taste, and go from there.

If you want to make more, just increase the numbers. It’s so simple, so tasty, honestly, I don’t know why kids love the boxed stuff so much!

Once you make the homemade version, like this Super Simple Creamy Macaroni and Cheese, It’s so thick, creamy and delicious, maybe you won’t refer to it as a “kids” meal anymore.

One thing I love about homemade macaroni and cheese is the versatility. A sharp cheddar cheese makes a delicious simple mac and cheese but if you want to create a fancier dish, mix up the cheeses. Super Simple Creamy Macaroni and Cheese
Instructions
  1. Cook pasta according to package directions. Drain and set aside.
  2. In a medium sauce pan, melt butter over medium low heat. Whisk in flour.
  3. Cook for about 1 minute. Add cayenne, nutmeg and season with a dash of salt and pepper.
  4. Turn to medium heat and slowly whisk in heavy cream.
  5. Add cheese. Stir until incorporated. Cook about 5 minutes, until the sauce thickens a bit.
  6. Taste. Add more cheese if it’s not cheesy enough, and season if needed.
  7. In a large bowl, mix pastas and sauce. Serve immediately.
  8. Enjoy!
Recipe Notes
  • Taste and add more if not cheesy enough.
  • You may have extra sauce. Just save for later. 🙂
  • If you find your sauce getting too thick, add a bit more cream or milk.
  • To reheat extra sauce, warm in a saucepan and whisk in a bit more milk. Cheese sauce, like gravy, thickens in the refrigerator.

  1. Oh yum! I am OBSESSED with macaroni cheese as we call it over here. Though I am sure you CAN get boxed macaroni cheese in the UK, I don’t think it’s such a big thing. I’ve always had it homemade…I loved my mum’s version when I was little – she used to add a little dijon mustard into the mix and it is a game changer – sooo good! I have since gone on to make so many different variations…from butternut squash mac and cheese to leek and bacon flavour…and just lately I’ve been working on a chorizo version. And I love’em all! But I’ve never tried making it with cream before, always milk, I’m going to have to try that! Thanks for sharing your creamy version with #CookBlogShare. Eb x

    • I had never made it with cream before either. It’s funny how that is. Your versions sound delicious too. I want to try butternut squash mac and cheese and leek and bacon sound delicious too. I’m always looking for new ways to incorporate squash cause my kids don’t love just eating it plain, that is unless it’s a sweet potato fry. 🙂 I’ll have to check out your recipes. Thanks!

  3. Mac and cheese is my kids’ number one favourite meal, which I make quite often, and whenever we go back to Canada to visit (I used to live there) they always ask for the boxed stuff! We don’t have that in the UK (thank goodness, as they prefer that to homemade:)

    • I didn’t know you didn’t have the boxed stuff in the UK. I wonder why? It’s funny, how kids (and even adults sometimes) like it even when they love the homemade version. I do always sneak a bite cause of nostalgia. 🙂 I almost think my kids think of it as a different meal though, you know? Boxed stuff definitely tastes different.
