Super Simple Creamy Macaroni and Cheese

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a medium sauce pan, melt butter over medium low heat. Whisk in flour.
  3. Cook for about 1 minute. Add cayenne, nutmeg and season with a dash of salt and pepper.
  4. Turn to medium heat and slowly whisk in heavy cream.
  5. Add cheese. Stir until incorporated. Cook about 5 minutes, until the sauce thickens a bit.
  6. Taste. Add more cheese if it’s not cheesy enough, and season if needed.
  7. In a large bowl, mix pastas and sauce. Serve immediately.
  8. Enjoy!
Recipe Notes
  • Taste and add more if not cheesy enough.
  • You may have extra sauce. Just save for later. 🙂
  • If you find your sauce getting too thick, add a bit more cream or milk.
  • To reheat extra sauce, warm in a saucepan and whisk in a bit more milk. Cheese sauce, like gravy, thickens in the refrigerator.
