Triple Chocolate Cookies

It’s officially that time of year when holiday parties and potlucks are abundant.
This weekend my daughter’s dance studio had a potluck. I’ve been so busy lately but I wanted to bring something fun, tasty and easy for my daughter to help make. These Triple Chocolate Cookies came to mind. They’re really easy, super chocolaty and make a ton of cookies — a perfect treat to bring to a bunch of little dancers.
These cookies are what I refer to as semi homemade because you use cake mix and brownie mix instead of flour and cocoa powder. Doctoring up cake mixes is fun and results in simple, delicious treats. The hardest part of this recipe is the time. The recipe makes 90-100 cookies so while prepping the cookies is quick, you’ll spend a bit of time baking. The high yield is why it’s the perfect cookie to make for a crowd, or perhaps a bake sale.
My mother-in-law has made these cookies for years. My husband and brother-in-law love this chocolaty, chewy cookie. But really, who wouldn’t? I think it’s fair to say these cookies would please any chocolate lover, or anyone who can’t decide what they want more, a cookie or a brownie.
Just like traditional chocolate chip cookies, I used a bag of semi-sweet chocolate chips. But feel free to experiment with other goodies. You could add dark chocolate chips, white chocolate, pecans or walnuts. Just don’t add too many extras or your cookies may not hold together as well.
