My husband isn’t a traditional cake lover; cheesecake and pound cake top his list. So, since I’ve made cheesecake quite a few times over the last 15 years, I opted to make something new for his birthday this year, so I tried out brownies a la mode.

I’ve made brownies dozens of times, from the box and from scratch, but I’ve never created my own brownie recipe. Since it was a special occasion I wanted to make the best possible brownie. I wanted it to be dark chocolate with extra chocolate chunks, and moist with a perfect fudgy texture. Since my husband doesn’t care for traditional cake the fudgy texture was essential.

I also wanted the brownie to be tasty on its own. While you could add nuts or marshmallows, or top it with frosting, I prefer brownies just the way they are. Or if it’s a special occasion, a brownie topped with vanilla ice cream and hot fudge is quite hard to resist.

After some intense Internet research … I tend to go a little over board when it comes to research … I developed this recipe. And I’m so excited to say that it turned out great. I was nervous, because for some reason whenever I make something for someone else, that’s when things tend to go wrong. I just don’t get it, I’ll make a recipe tons of times and the one time I make it for other people something will go wrong. Life is funny that way.

Anyway, I’m happy to say these Triple Chocolate Fudge Brownies turned out just the way I envisioned. I was so excited. The kids loved them, and most importantly my husband enjoyed his birthday brownie a la mode.

I discovered through my brownie research that if I wanted a dark chocolate brownie I needed to use an unsweetened baking chocolate bar. But since my goal was a super rich chocolate brownie, I decided to add cocoa powder and chocolate chips. If you’re not a dark chocolate lover you could opt for a semi-sweet chocolate baking bar instead.

Since my goal was a fudgy brownie I used less flour and I used a combination of granulated sugar and brown sugar. Both sugars add sweetness but the brown sugar enhances the overall fudgy texture of the brownie and when you’re going for a real fudgy brownie like I am, you’ll do everything you can to enhance that moist texture.

Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, melt 4 ounces unsweetened baking chocolate with butter for 1 minute in the microwave at 50 percent power. Stir, and microwave at 50 percent power in 20 second increments, stirring each time until the butter and chocolate are melted and combined.
  3. Stir in sugars until the mixture is smooth, followed by eggs and vanilla.
  4. Mix in cocoa powder, salt and flour.
  5. Stir in chocolate chips.
  6. Line an 8x8 baking pan with foil or parchment paper. Pour batter into the baking dish.
  7. Bake for 30 to 40 minutes, until toothpick comes out clean.
  8. Let the brownies cool completely in the pan on a wire rack. Once cooled, lift the brownies out of the pan by the edges of the foil or parchment paper. Transfer to a cutting board and cut into squares with a sharp knife.
