  1. Boil water and cook pasta al dente, according to package directions.
  2. Preheat oven to 375 degree F.
  3. In a saucepan, melt butter, over medium low heat. Add flour and whisk until incorporated.
  4. Slowly pour in milk while continuing to whisk.
  5. Season with nutmeg, cayenne, white pepper and salt.
  6. Stir in cheese. Taste and add more seasoning and cheese if needed.
  7. Add in cooked pasta and mix together.
  8. Butter a 9×13 baking dish. Pour macaroni and cheese into dish and sprinkle with cheese.
  9. Bake about 20 minutes until the macaroni and cheese begins to brown and bubble.
  10. Serve and Enjoy!
